If I could, I would color coordinate everything we can with the specific color the students have chosen (notebooks are by subject with their specific color to be easily identified), and when we can't color coordinate, we attempt to turn it into a colorful piece of art or project (to display on our walls). With colorful copy paper and construction paper, the sky is the limit with their ideas. They are always proud to show us their end result. I think the displays in their classroom will also help with their positive self esteem. When other students/adults come in and ask about the work on display, the owner (student) is always proud to raise their hand (or just start talking) and share information on what they did :)
