You can buy a kit for anything these days, but building parts from readily available materials empowers students to develop their ability to create on their own. I wore out an old band saw making parts for STEAM projects. This year I will need to make wheels, sculpture parts, tiny homes for insects, mini-golf putters, signs, PE components, and that is just what we know we are doing.
We don't want to live in a world surrounded by cheap plastic. With the proper fabrication tools I can involve students in the design, testing, and redesign of our projects. There is something magical about holding something real. Wood and metal hold our world together and it would be a disservice to our students to deprive them of the experience of using those materials.
