When teaching remotely you are in a google meet with your entire class. My classes range between five to ten special education students in them. That means that in the meet grid I will have several postage stamp-sized pictures of my students.
Having two screens allows me to use the second monitor to view all my students at once and to use my computer to display the necessary materials to meet the needs of my special education students.
It is very similar to do doing two things at the same time. The larger the monitor, the bigger the grid pictures of my students. Also, an additional monitor will allow me to review assignments and IEPs to meet the needs of my students. We would be able to interact more personally, and I would be able to give my students the guidance and assistance they need. Considering my district is remote until at least January 19, this would make virtual teaching easier and a little closer to being in-person.
