The culinary industry is hurting for highly skilled employees due to Covid-19. Learning knife skills will directly benefit every student in the job market by helping them have the skill of knife usage (along with the other skills learned such as safety and sanitation,) as well as the confidence to utilize that skill.
Hands-on opportunities boost confidence and skill level, allowing the student to directly benefit from access to professional-grade tools used in the culinary industry.
Many students do not have professional-grade tools at home. Purchasing the professional knives will allow the students to build confidence in a skill that can be scary for anyone.
