We need to have the tools to graph functions so that we can visualize patterns in the shifts of graphs with different parameters changed and the graphing calculators are a perfect tools for seeing immediate changes in graphs with minor changes to the equations. Also, We can see numerically how little differences in an equation effect function values. By hand, or with the free graphing apps for phones, we just don't have the powerful algebraic capabilities or built in memory needed for faster equation processing so more can be tested. Visual comparisons teach more than just the algebra or numerical analysis alone.
