All of the students that I teach have Individualized Education Plans and are also on the Autism Spectrum. Sitting at a traditional desk for long periods of time in not compatible with their nervous systems
Students with learning differences often need a large, clear visual to reference in order to access the curriculum. Instead of listening to me talk, which they won't remember, I can put something on the projector from my computer for them to look at, or use the document camera to give examples of what is expected of them in reading, writing or math.
I also teach a social skills group in which videos are a large part of the curriculum. At this point my students have been huddled around my laptop and strain to see the videos. The projector would make viewing videos accessible for the whole group.
